White Christmas by Narelle C

2 cups mixed fruit
1 cup coconut
3 cups rice bubbles
1 cup icing sugar
1 cup powdered milk
8 ozs copha

Melt copha and mix together with other ingredients.  Spoon into tray and set in refrigerator. Slice to serve. I have also spooned into small patty paper cases for individual serves.  As I'm the only family member to eat this and it doesn't do well in our Aussie heat, I don't get to make it as often as I would like.


Choc Chip and Nut Cookies by Narelle C

125g butter
1/2 cup caster sugar
1/2 cup brown sugar
1/2 teaspoon vanilla
1 egg
1 3/4 cup SR flour
125g chocolate bits
60g chopped macadamia nuts (or use pecans or walnuts)

Cream together butter, vanilla and sugar. Add egg and beat well. Mix in flour and add chocolate bits and nuts. Shape mixture into small balls and place on oven trays. Bake for 10 to 12 minutes at 180C. 
Makes approx. 45.


White Clay (for non-edible ornaments)

1 cup bicarbonate of soda (baking soda)
1/2 cup corn flour (corn starch)
3/4 cup of warm water

Mix the dry ingredients in the pan then stir through the warm water.
Mix over a medium heat, stirring as it starts to bubble and come away from the sides of the pan.
When it has started to dry and resemble a soft play dough consistency, take it off the heat and leave it to cool for a few minutes.
Turn out onto the counter and knead it for a couple of minutes to make it super soft and pliable.
Roll or press out and use your cookie cutters.
Don't forget to make a hole if you wish to hang them up.
Air dry and have fun painting if desired.
